Chocolate Mountains - Chef Johann Lafer-
  1. First of all, prepare the cream by beating the egg in a bain-marie.
  2. Soak the gelatin in cold water and add it to the beaten egg.
  3. Melt in the white chocolate and praline in a bain-marie. Add some rum and Cognac. Then, mix slowly with the Chantilly. Add the crushed almonds.
  4. Next, fill some small bowls with this cream.
  5. Cover them with cellophane (plastic foil) and store these little â??mountainsâ?? in the cold.
  6. Prepare the chocolate topping.
  7. Mix chocolate, crème fraîche and sugar.
  8. Take the mountains out of the refrigerator and place each on a round Genovese waffle.
  9. Let the chocolate topping flow over it.
  10. Place these little chocolate mountains on a cold serving dish and decorate with white chocolate around.
  11. Now, add the 3 different sauces in a visually creative manner:
  12. The English cream, the currant sauce and the mango sauce.
  13. You can further add some mango slice, chocolate crisps, mint leafs as well as chocolate sauce. Be creative with the decoration - and enjoy your dessert!
