Citrus Fruit Soup and Orange Crisps-
- Peel the oranges and the clementines. Separate the segments and keep them in a little box. Add the syrup and the Grand Marnier. Cool it for 2-3 hours.
- In order to prepare the orange crisps, mix all the ingredients. Store it cool.
- Place little piles of this mixture on a Silpat plate to obtain little biscuits after cooking. Cook for 5-6 minutes.
- Put the citrus fruits on a serving dish with the cooked biscuits and the mint. Serve it very cold.
