Melon Glazed with Acacia Nectar and Fresh Mint


Melon Glazed with Acacia Nectar and Fresh Mint-
  1. Grate the green lemon peels. Recover the lemon juice. Blanch the peels.
  2. Recover the juice from the mature lemons in a bowl.
  3. Bring to the boil. Reduce ¼. Add the acacia honey. Reduce another ¼. Add the green lemon juice.
  4. Continue the cooking until obtaining a liquorish consistency. Store cold.
  5. In the meanwhile, cut the other melons in half.
  6. Peel and cut into thin slices.
  7. Place these slices as a flower in a concave dish.
  8. Cover with the mixture, when it is cold, and sprinkle with the lemon peels.
  9. Finally, add some minced mint.
